I want to change old style taps e.g, everyday unscrewers for the ones the Caroma luna lever style. How do you measure to make sure you have correct tap? Is it from the wall to the tip of the protruding tap valve? Don't want to do two trips. Also, do you use the current tap valves or are different ones necessary?

Are these all wall taps? There is only one lever-style wall tap in the Luna range, the Caroma Chrome Luna Wall Top Assemblies Lever. Typically, wall assemblies come with longer spindles to reach the seat, which is deeper due to the wall lining and tile thickness. A basin doesn't require such additional depth.
There isn't a selection of different depth spindles for you to choose from; it's just the ones provided in the kit. These spindles are depth-adjustable to suit standard depths. I'd suggest you pick up the sets and check that they fit. If your seats are outside those depth parameters of the included spindles, we'd need to look at extensions for you.
The Luna has ceramic disc valves included in them, so there is no need to re-use your existing ones.
