Howdy,
I want to install these on my ceiling to help with soundproofing:

How do I hold them up, and how do I fix them? Glue, screws, double-sided tape?

Thank you for your question and welcome to the Bunnings Workshop community, it is fantastic to have you with us.
You could use any of the three products you have described as these boards are very lightweight and won't require a whole lot to keep in place. A combination of glue and screws will yield the best results but may be overkill in this situation.
My suggestion is to use Plasterboard Screws, screwed through the acoustic board into the ceiling battens. You can locate the battens easily with the use of a Stud Finder.

The reason I'd suggest screws over simply gluing is that they will not be affected by gravity over time, whereas glue alone would likely pull away from the plasterboard over time. A screw solidly embedded into timber, will not do this over time, whereas glue or double-sided tape will.
If you want the best connection possible, it can't hurt to use some Liquid Nails alongside the screws, but it is entirely up to you.
