Hi,
I tried painting over the peeling spots, but it did not offer adequate coverage.
What is the best way to approach repairing this?

The paint is likely delaminating from the MDF as it's near a high-moisture zone of the sink, and water is accessing it. I'd recommend you sand the affected areas back with 180-grit and then 240-grit sandpaper until the area is smooth and you can't see the edge height difference of the chipped area. You can then prime with Dulux 1Step and once dry coat with Aquanamel. Ensure you get the underside of the board edge and places out of view. You want to seal the MDF entirely so there are no exposed areas where moisture can penetrate. I'd suggest priming and re-painting the entire area for consistency.
