I have stripped the table to natural timber. I now need to find a heat resistant, water resistant, stain resistant finish which will also even put but not cover the variations in colour of the natural grain. I was going to use Tung Oil but I need a darker finished product. How can I do this using food safe products? Any suggestions? This is what I want it to look like more or less.

As soon as you mention "food safe", it drastically limits your available coating options. Are you looking to place food items directly on the surface and use this as a food preparation board? Food-safe coatings are typically used on things like chopping boards. Also, what sort of heat resistance are you looking for? Are you talking coffee mug or pan directly from a stove? Most coatings will allow a coffee mug to be placed down, though it's best to use a coaster. Anything hotter than that will require a trivet.
Some options would be Gilly's 200 ml Food Safe Wax, Gilly's 250ml Chopping Board Oil, Feast Watson 125g Kitchen Timber Wax and Feast Watson 250ml Kitchen Timber Oil.
The oil-based products will send your timber darker, whereas the wax-based product won't. Check out the discussion Foodsafe varnish for chopping board by @dprice1 to see the Gilly's chopping board oil in action.
You'd need to stain the timber to match the look featured in your inspiration image. I'm unaware of any food-safe products that would allow you to do this.
