Hi All,
aI hope you can provide some guidance regarding my greatest fear for when the concrete floor is not levelled for hybrid plank installation.
List of my questions:
1- How would I fix the levelling on the concrete floor should this become a real issue?
2- Are there any other considerations I need to make before laying them down apart from levelling and living the expansion gap?
Cheers all

Welcome to the Bunnings Workshop community @happybuildings. It's great to have you join us, and many thanks for your question about levelling a floor.
If you have an un-level concrete floor, you'd need to solve that issue before installing the Hybrid flooring. You might like to post some images of the floor so our members can better understand what you're working with and offer some informed guidance.
Using self-levelling cement is a great way to achieve a level surface without imperfections and to ensure the floor is hard, smooth, level and free from cracks.
If you're not using a self-leveller, then the concrete must be thoroughly mechanically cleaned of all paint, curing agents, grease, wax, and other foreign matter. Use a suitable repair compound to fill grooves, cracks, holes and depressions and ensure that your concrete floor is dry before laying the flooring. The floor must be hard, smooth, level and free from cracks.

Please let me know if you have further questions.

Thank you @MitchellMc for your thorough response.
In my case, I am still unsure whether or not I will need to do any levelling.
After looking at few videos on how to so for self-levelling as an DIY, I feel like I would rather get a concreter to come and do it for me.
Thanks a again for your time.
