Hi there!
Previous owners of our home painted all the internal doors black, which is fine but I'm not a big fan (photo below). Plus - I've had a mishap where I've walked straight into a door in the middle of night due to the colour...
Current paint is Dulux Te Kuito. I'm looking at painting both door and frames in Taubmans Cotton Sheets.
I'd love some help with what primer would be best for coverage, type of finish for top coat, type of rollers/brushes to use, plus any more tips on painting over a dark colour. I'll be getting new hinges/handles.

I would start by having a good read of the Bunnings guide How to paint a door, which includes step-by-step instructions and a video.
For a primer, I'd be looking at Zinsser CoverStain, but let me tag a couple of our resident Bunnings D.I.Y. experts for their thoughts: @EricL and @MitchellMc. @Jason is on the money there, and Zinsser Coverstain is a great product to use. You might like to discuss the need to have it tinted to a grey with our in-store Paint Expert for better coverage of the dark colour. I don't believe it will be necessary, but it might help it cover in one or two coats rather than worst case three.
For the topcoat, I recommend you go with Dulux Aquanamel. It's a hardwearing, easy-to-apply, water-based enamel paint suitable for doors.
