I have a cavity sliding door which is not level. You can notice a gap at the top left hand side of the door. When you close the door it won’t stay shut but has a tendency to roll back. I have a small flat spanner for the top nuts, left side and right side. Only problem is, which one do I turn to get the top left level and which one to turn to level the bottom left hand side of the door.

It really depends on how far from the ground each side of the door is.
Bringing the left side up will level out both the top and bottom by raising the left side of the door. Lowering the right side will level out both the top and bottom by lowering the right side of the door.
Typically, you want around 10mm of clearance to the ground, so if the left side of the door is about 10mm from the ground, bring the right side down. If the right side of the door is about 10mm from the ground, bring the left side up.
