You should find these step-by-step guides helpful: How to grow lawn from seed and How to lay instant turf. I'd add the extra step of aerating the soil/sand and applying a 30mm layer of top dressing. Buffalo, Couch and Kikuyu would all be suitable for the climate in Brisbane.
