Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about your caravan renovation.
I'm not overly familiar with the lamp that's on your caravan, but I do know that it is built for vehicles. It can withstand exposure to the weather, put up with vehicle vibration and is secured in such a manner that a screw or bolt will need to be removed to dismantle it.
In regards to the door lock, I suspect it will be the same, but I suggest bringing it to the store and see if it will match with any of the side latch mechanisms available at the store.

If I were you I'd join one of the Facebook groups specifically for Millards. These groups have lots of people like you just starting out. If you use the search icon on the group page you'll easily find your answers, or just post questions. Original lights are relatively easy to source within the groups, although, for the external light, there are simple plastic oyster lights from Bunnings which will do the same thing.
It looks like someone has already started the renovation on your van. You can see the area around the window where the paint has been sanded off. I imagine the sealing of the windows has been done, which is a bonus for you. To be sure, run your hose pipe over them and see if there's any leaks.
Once you've ascertained what you need, using the FB pages, you'll also find the sites you need for spare parts. Vintage Caravan Spares, Caravans Plus are two which come to mind. They're specific online shops supplying exactly what you need.
I would also recommend following instagram pages for Millards. There's so many people showing how they do things, I have no doubt you'll find help there.
