We have a really old outdoor area where the brickwork has lost most of its mortar
. Lots of weeds grow in the gaps. What’s the best way to repair/ refill this?

Over time, mortar between pavers tends to crack and degrade because the bricks shift with movement and weather exposure. This is why it's generally not recommended to use mortar as grout between pavers. At this point, the remaining mortar in your outdoor area is significantly deteriorated, and even the intact sections will likely crumble over time.
If you attempt to remove the broken mortar and patch the gaps, it may not be a long-term solution, as the same issue will continue. Given the extent of the damage, it might be worth considering lifting all the bricks and starting fresh. This would allow you to assess the base underneath and decide whether to use mortar again or opt for a more flexible option like paving sand or polymeric sand, which moves with the bricks and helps prevent weeds from growing in the joints.
