How would a brick patio be installed with a motor washed appearance as in the attached image & which materials to use (other than the obvious paver bricks). The pattern is not important as a straightforward stacked bond pattern can be used.

To achieve a compelling result, you'd likely need to use rustic-style bricks that have a variation in their surface and texture. If you were to use modern bricks, you could run the risk of the effect simply resembling a sloppy mortar job.
Essentially, this effect can be created by not thoroughly cleaning the bricks down after applying mortar to the joints; partial cleaning is all that's required. In your, image it appears that they've used white cement instead of grey cement.
You'd likely need to lay the pavers onto a mortar bed, as if you bed them on sand the movement will cause your mortar grouting to crack.

Are you able to please give me an idea of what products I will need for a white mortar mix and the ratios to use?

The key to the project is locating a suitable mix in a white colouring. White cement or mortar is not available in all locations. You can see availability on the Bunnings website by searching white cement. Failing something being available online, you might like to drop into your local store and speak with a team member in the cement section. You can also have our team at the Special Orders desk speak with suppliers in your area to see if there is a light-coloured mortar we can order for you.
Typically, you use the mix straight from the bag and only need to add water in the specified quantities.
