Hi,
I have installed Mimosa Gazebo https://www.bunnings.com.au/mimosa-3-x-3-6m-charcoal-palermo-gazebo_p3192508. on artificial grass. Is it a good idea to fix PVC Bistro blinds https://www.bunnings.com.au/marquee-pvc-outdoor-cafe-blind-clear-3000mm-x-2400mm_p1281605 on it?

Installing Bistro Blinds would certainly be an option if you wished to enclose the area. What were you aiming to achieve by installing the blinds? The clear versions are great for stopping rain from entering the area, but I could see them making it quite hot during summer. You might like to consider installing either shade blinds or summer screen blinds. The shade blinds are great at blocking the sun, and the screen blinds are excellent for keeping insects out of the area whilst allowing the breeze through.

I to have just purchased two of the Palermo gazebos and are looking at bistro blinds what sizing would I need to get to fit right around and how easy would they attach to the frame. Thanks.

The Palmero gazebo is 3000 x 3600mm. For the 3000mm sides, you could use the Marquee PVC Outdoor Cafe Blind - Clear 3000mm x 2400mm, and for the 3600mm side, you could use the same but with a 300mm extender on either end to make up the additional 600mm.
Your DIY ability will determine the ease of installation. Fixing would involve attaching the blinds to the gazebo's frame, so it might be a job best left to the professionals.
Be advised that adding walls to the structure changes the design of it. It would be best to have them professionally installed and to ensure that they are bolted down to a concrete slab or suitable foundation blocks.
