Okay - so I was in a hurry to finish painting my home office (before the carpet was installed) and I have paint on the cornice. I was wondering if there was an easy way to remove this (the cornices are white and the walls are Hogs Bristle) or if I just need to retape and paint them.

Welcome to the Bunnings Workshop community. It's marvellous to have you join us, and thanks for sharing your question about painting your cornice.
Your proposed solution is spot on. It's better to tape up the edge and repaint the cornice in its original white. You can imagine how time consuming it would be if you had to sand it down, prime and repaint the surface.
My best advice is to take your time when taping up the edge so that you get a perfect finish.
