I assume this is a commercial kitchen? I think our members would be hesitant to give you advice as I imagine there would be strict rules and regulations for a commercial kitchen. I would recommend you connect with your local council to understand their requirements and your responsibilities for ensuring a safe workplace.

Just to add to the suggestions made, I also recommend speaking to a registered shop fitter in your area. Tell the fitter the type of shop that you have and what you would like to do. An experienced shop fitter will be familiar with the rules and regulations of the council regarding fire safety.
It's not necessary to commit right away, I suggest asking for a quote on how much the modification will cost. You can also bring the plans to the local council and ask the inspector if the proposed plan is viable.
