Hi everyone, I'm wanting to attach these doors to this kitchen island. What sort of hinge would I be best using? Is there a shallow option for this scenario?

Welcome to the Bunnings Workshop community. It's sensational to have you join us, thanks for sharing your question about installing hinges.
If your timber posts are more than 50mm thick a standard Hafele 105° Soft Close Full Overlay Clip On Hinge will fit onto your cabinet frame. But if there is not enough space, I suggest padding the timber frame to allow the hinge to mount correctly. My only other suggestion is to use standard non rebated hinges to mount the door.

Yes you could use that style of hinge. Just keep in mind the actual size of both doors vs the opening as these would result in the doors closing much closer together over the soft-close. Then that will most likely result in having to cut the doors down on their ends.
I would stick with the soft close and look to add a small timber section fixed to the inside of the cupboard and level with the front frame. This will give you the depth @EricL mentioned to fix the clip on base of the soft close hinge. There are no shorter base options than what you have.

Yes, they would be the type of hinges Eric was mentioning. However, I note your doors don't extend right to the outer edge of the upright attachment points. They would need to do so with this type of hinge as they are attached there. As Nailbag has mentioned, this would induce a gap between your doors.
You might like to check the mounting location for the screws on your hinge. Although it's likely to overhang at the back due to the thin width of the upright, the screw might actually be able to attach to them.
I think Nailbag's method of adding blocks at the hinge location would be the best method here.
