I have an adaptor from my fridge that connects to the tap. Unfortunately it is too big (20mm) for the water point outlet (15mm). Is there an adaptor that can convert that 15mm outlet to a 20mm outlet to allow me to connect it?
Also, what sort of tool do I need to properly secure and fit the adaptor as well as the connector? I have no DIY experience at all.

You only need sealer or thread tape not both, sealer is a bit more novice friendly but at a higher cost.

Shifter should only be used to remove the cap ( make sure the tap is off) and to screw on the adaptor and make sure the thread is clean before using the tape or sealer. Fridge side fitting should screw on by hand and seal against the rubber washer, no tape or sealer should be needed for that.
Welcome to the Bunnings Workshop community @Filo_Guy. It's wonderful to have you join us, and many thanks for your question about your fridge water connection.
It's sensational to see one of our knowledgeable members, @Brad, offer some excellent advice, and I can only second it.
I'm having trouble accessing our link to the 20 x 15mm bush; if you are too, here's an alternative in brass: Kinetic 20 x 15mm M / F Brass Threaded Adaptor.
I look forward to hearing that you successfully connected your fridge. Please keep us updated and reach out if you need further assistance.
