I am wanting to paint these melamine edgings back to the white.
What kind of paint do I need to get? And would a paint brush or small pain roller work better?

That edge looks like it was painter allready which is good as you wont have to undercoat a melamine edge.
All the acrylic paints on the market are pretty good and clean up in water. Can I recommend you buy a sample pot of paint in the color white you choose as sample pots are less expensive than 1 litre paint tins.
A small brush will work well her as there is less cleanup. But feel free to use a small roller if you want.

As mentioned, melamine (plastic) typically requires a special primer. You'd then be able to paint over it with a suitably hard-wearing enamel paint.
