What is the best way of installing floating shelves underneath the work top? I’m unsure about which drill bit to use for this

Are you using premade floating shelf kits? Or, are you trying to construct them from scratch?
If you were going to use something similar to this Montgomery 600 x 38 x 235mm Matte White Floating Shelf, you'd simply need to pre-drill for the included screws. A 3mm pre-drilled hole would normally suffice. You might need to pick up separate screws that are short enough not to penetrate the interior of the cabinet.

That was exactly the shelves I was looking at. I was worried that the cabinetry would be too thin to support the weight.
Would it just be like drilling into any bit of wood? Same drill bit?

Please double check the length and thickness of the screws to make sure that it can hold the weight of the shelves. I propose bringing the shelf to the screw isle to double check. Please measure the thickness of your cabinet wall so that you know exactly how much space you can use for mounting. In regards to your question, yes, it's just like drilling into timber and standard drill bits will work.
