Never grown or eaten or seen one before (same with the Jostaberry growing extra well out front!) Would anyone know how red (I assume) Tayberries
get before you know if they are ripe? I assume one picks them off the bush?

Tayberries are ready to harvest when they turn a deep, dark red or even slightly purple and feel soft to the touch. They look similar to a long raspberry but tend to be larger and darker when fully ripe. Once they reach this colour and feel juicy, you can pick them straight from the bush. Like raspberries, ripe tayberries will come off the plant easily when gently pulled; if they resist, they may need a bit more time to ripen.
For the best flavour, try to harvest tayberries when they are fully ripe, as this is when they’re the sweetest. They can be a bit tart if picked too early, so waiting for that dark colour and softness will give you the best result.
I've included an image below showing that the one in your image has some time to go. They need to be quite a bit darker.
