After some advice on this plant I purchased 3 weeks ago, I’ve noticed the last two days the leaves have started to wilt. I’ve been watering it every couple of days have I over watered it?.

It appears that it might be a case of the pot not draining sufficiently rather than overwatering. How well does the pot drain, and are you checking the soil to ensure it has dried out before you water again? Sick your finger into the soil; if it's damp/wet, don't water—only water when it's starting to dry out at the depth of your finger.
What's the temperature been like there the last few days?

There is water pooling in the saucer under the pot
The weather has been cooler for the Gold Coast last couple of days with some showers.
The plant is actually still in its original pot placed in the larger pot with gravel rocks underneath to fill the void.
How big was the pot that it was in @Tarlie24? It's best to get plants out of the sale pot as soon as possible, as they are typically quite small. I'd recommend you pick up some potting mix and plant it into the larger container so the roots have more available room to breath.
