Just looking for advice on how to improve the wood around my garden raised bed. It's starting to peel and I really want to improve it. Do I sand it all back and varnish it? Any recommendations for stain v varnish. How do I protect the grass? Thanks all

You can certainly sand the timber back and varnish it to restore the original look. I would suggest using an exterior marine grade varnish. What you might find it that water is entering the timber from behind where the soil is placed against it. This will cause the varnish to deteriorate faster than it should and since the edging is installed there is not much you can do about that.
You might like to lay flat pieces of cardboard down over the grass whilst applying the varnish. If you do a couple of lighter coats the amount you'll get on the grass should be minimal.
