I would like to replace the floor in this bathroom. Is it possible to use Vinyl sheets or boards over the top? It's the same within the shower cubicle too. TIA.

It is possible to put vinyl sheeting but not vinyl tiles in the dry areas of your bathroom. You can also install Hybrid waterproof flooring. However, you can't install anything inside your showers wet area except actual tiles.
Vinyl tiles usually have a stick on backing that allows it to be placed directly over tiles. Except in the bathroom, the heavy moisture generated by the shower will affect the adhesive of the tile and cause it to fail and lift up. Vinyl sheeting on the other hand is a single large piece that comes in 2- or 3-meter widths that allows you to install it in one go.
It has no adhesive backing and the edges are secured with heavy-duty double-sided tape. The best thing to install in your bathroom is Hybrid waterproof flooring. These come in a number of styles that mimic timber flooring, and because it is 100percent waterproof, it can be installed in heavy moisture areas. But it is not meant to be installed in an area where it is constantly immersed in hot water.
