I’m aware that when installing cornice on drywall you put nails in to withhold the position until set but I’m interested in knowing what you do on a double brick wall.

Thanks for sharing your question about installing cornice. The rules for installation stay the same except that you'll be nailing into the eaves. Now it will happen that some sections can't be nailed or perhaps it is in such a tight space. In those situations, I can only advise using masking tape to hold the cornice in place until the adhesive cures.
There is also the option of drilling pilot holes in the cornice and eaves, the screw heads can then be covered with filler and painted over.
