How can I uproot these tree stumps/roots to be able to work on the soil beneath
My previous home owners poisoned them with something (the stumps had holes bored in them). After few months I was able to use a long crow bar and pry them out. It did involve lot of sweat and you can do one per day.

Those stumps appear to be quite large and likely have an extensive root system, making removal by hand extremely difficult. If you’re determined to remove them yourself, you’ll need to start by cutting through any surface roots using a reciprocating saw, chainsaw, or handsaw. Once those are severed, you’ll need to dig around the stump to expose the tap root, which will also need to be cut before attempting to pry the stump out. This process can be labour-intensive and time-consuming, especially if the tree had a deep root structure.
Given the effort required, it might be worth enlisting the services of a stump grinding company. They can grind the stump down below soil level, allowing you to work on the soil beneath without the need for complete removal. This option is often more efficient and less disruptive to the surrounding area.
