Unfortunately, I am unaware of any varnishes, oils, or sealers suitable for bamboo due to its natural waxy coating, which prevents effective adhesion and absorption of coatings. This means that applying any finish can be quite challenging, as bamboo doesn't readily absorb products designed for wood protection.
The best approach for maintaining your black bamboo is to keep it clean and free from debris. Regularly washing it with mild soap and water can help preserve its appearance. If the bamboo begins to fade over time, you might consider simply replacing sections if necessary, as there aren't any coatings that will adequately protect it.
Over time, you might find that the waxy coating breaks down (this is when it starts to fade), making it more suitable to be coated. At that stage you'll need to do a moisture absorption test to see if the coating of the bamboo absorbs a droplet of water. If it does, you might then be able to varnish it.
