Could you please tell us a little more about your project? Have you painted the ceramic coasters or added anything but the vinyl to it? What sort of vinyl is it? Would it be a decal?
Rust-Oleum 298g 2X Ultra Cover Gloss Clear Spray Paint could be an option, but since this is a craft project, you'd need to do a test section to confirm its suitability. If the vinyl has a smooth, non-porous surface, the spray paint might have difficulty binding to it, causing it to be easily scratched off.

These were store bought coasters (ceramic, and I also have one with marble) both coasters I have added holographic vinyl to it. (Cricut vinyl — apologies this is my first attempt on an art project) therefore I am unsure too much of detail)

I have concerns about coating over that stone surface. It appears to be quite smooth and not porous. If the coating can not soak into the surface and only sits on it then it's not a great connection.
You might like to look towards specialised products like UV reactive resins for coating. The Boyle Crafty Resin 250ml (125ml+125ml) Kit could be an option and worth doing an experiment with. Resin is far thicker than sprayed coatings and is more likely to leave you with a durable surface. You'd elevate the coaster so excess resin can run off the sides. Apply your resin and smooth it out on the surface. Pour enough so it runs off and covers the sides. Pay attention for the first hour and wipe any drips on the bottom edges off with a paddle pop stick.
