I hate this wood trim of my bench. I was thinking to sand it to get it back the nice wood that is underneath and then either use a satin varnish or later in the future paint it a colour. How do I go about sanding this?

Do you have a power sander? If so, the front flat face would be the perfect place to use it. For the quad moulding on top, you might like to use a sanding sponge as they'll conform much better to the profile than a solid base sander. I'd recommend you start with some 180-grit sandpaper and check to see how well it's cutting through the varnish. If you're not making any headway, then you can drop the coarse down to 120-grit. You want to use the least aggressive paper possible whilst still making progress. If you add scratches to the underlying timber, you'll need to sand them back out again.
You could use a Multi Tool with the sanding attachment to complete this whole process. However, you just need to be very careful on the quad moulding to not put flat spots in its profile.
Once you've removed the aged varnish, you'll be free to coat with your choice of satin varnish.
