We recently changed our kitchen sink and chipped the laminate countertop. Does anyone have a suggestion on how to repair this?

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about repairing your laminate kitchen benchtop.
Do you still have the broken piece in your possession? If you do, I propose sanding the bottom of the broken piece so that it sits flat on the damaged section of your benchtop. Your goal is to apply Selleys 130g Liquid Nails Ezi Press to the broken piece and position it back into place. It needs to be exactly at the same level as your benchtop so that the break will be small or hardly noticeable.
Once you have the broken piece in position and the adhesive has cured, I suggest filling the tiny gap with Parfix 500g Ready To Use Multipurpose Filler. Make sure to use only what is necessary, you only need to fill that gap so that it will not be noticeable. Once the filler dries off it can be lightly sanded down if necessary.
However, if you no longer have the broken piece, I suggest using Selleys 50g Knead It Aqua Epoxy Putty. I propose mixing it very well in your hand and pushing it into the damaged area, once you've pushed the putty into place carefully flatten it with your fingers and use a 100mm Sharp Edge Paint Scraper. Please note that the product will dry off in light grey. It is possible to paint over it, but you'll need to touch it up every now and then when it fades.
The third option is to engage the services of a benchtop repair specialist and get a quote on how much to patch up the broken section of your benchtop.
