I have already had significant help here in a previous post, with thanks!
I started tiling on the weekend, and despite being set on white grout, I now question if I will loose sight of the pretty tile with white. Looking to switch to a light gray grout instead.
Should the silicone then also be light gray? Or do I leave it white?

It depend on owner. If tile is white white silicon looks OK.

I'm placing my vote to putting grey silicone to keep the uniformity in place, plus it will give your tile better definition when viewed from a distance.
The bottom of tile will be less visible when using a light-coloured silicone and will provide poor contrast against the grey grout. I've drawn up a quick sketch to give you an idea of the contrast.

Thank you for your response and diagram Eric, very helpful. Would you still recommend sealing the grout, or is that only to protect the white colour?

I definitely recommend sealing your grout.
Sealing the grout does two things, it prevents dirt from settling into the grout and protects it from moisture damage. This means less cleaning of the tile grout and a much longer service life.
