Would this be possible, looks like I need to remove the trim around the old cupboard.

I can't see why installing cabinetry similar to your inspiration image wouldn't be possible.
It looks like the shelving was installed before the door jamb and architrave so it would need to be removed before you could make a flush finishing cabinet like this.
The catch is you couldn't hang a door to cover the cabinetry because you wouldn't have a door jamb.
Once the cabinetry is installed, you will need to finish the plaster with an external angle to give you a nice clean corner and a clean finish.
