Any suggestions to stop water escaping out an open shower, it’s pooling right out the door if we aren’t careful.

The water should be running down a slope towards the drain, not pooling in the area and making its way out the entrance. Is it splashes from the showerhead that are managing to escape the area? If so, you can install a shower head with a narrow spray pattern or one with adjustments. Or, tilt the shower head so it's facing more down than towards the entrance.
Open shower stalls typically have issues with wetting the floor outside them. A bath mat at the entrance is normally necessary to stop water from spreading into the bathroom. You could look at siliconing a Sandleford 12 x 1000mm Clear Shower Floor Channel across the entrance to stop water migrating out of the area.

Hey. Awesome to find this post, i didnt know bunnings had this.
Question: i bought what was suggested. Do i need to silicone this thing down etc.? By default it appears to have no sticking mechanism.
If so, what is best to stick it down with?
This will be on tiles (stone sort of tiles)

Thank you for your question and welcome to the Bunnings Workshop community, it is fantastic to have you join us.
Start by cleaning the tiles thoroughly to remove any contaminants that would affect adhesion.
Once cleaned and dry, I'd suggest applying a bead of Selleys 300g Clear Wet Area Waterproof Silicone Sealant to the bottom of the Sandleford 12 x 1000mm Clear Shower Floor Channel and sticking it in place.
You can then apply a bead of the same silicone to the bottom edges of the seal. Check out How To Silicone a Gap for some guidance on this.
Allow 2-3 hours for the silicone to dry before showering.
