Looking for advice on how to repair chips and uneveness in our outdoor render. Would render/mortar did the job? Keeping the repair substance and finish even would be my concern. Any tips would be appreciated.

That gap is sitting over an expansion joint foam which means that area may move a little with hot and cold weather and will destroy any render cracking it. So Render is not recommended.
You would be better off applying a gap filler with some joint flex in it. IE No more gaps external
First cut some of that foam at 45 degrees angling down into the gap with a sharp stanly like knife. You dont want all the foam out as it will help you fill it next.
Buy No more gags the external use version and a caulking gun if you don't own one ask the tool shop as to its good operation would be easier than written advice.
Basically cut the free supplied applicator nozzle at 45 degrees and have a 10mm hole
So caulk along the gap filling it with no more gaps (external variety) smooth the bead of no more gaps with you finger and clean up with water and a rag. No need to fill more than 20 mm into the hole
The following no more gaps is more expensive buy it is Off white in colour if that suits you and is even more weatheer resistant.

I agree with @Jewelleryrescue that these gaps are acting as an expansion joint. If you were to fill them with a rigid material such as mortar and then render over them, they would likely crack pretty quickly as the vertical and horizontal surfaces move independently of each other.
You are much better off using the method Jewelleryrescue has described, which is using some filler rod as a backing on the wider gap and then applying an outdoor filler like the Selleys 440g Off White No More Gaps Bricks And Mortar Gap Filler.
