Hi, I purchased a water based stain varnish (walnut) for multiple projects but I hate the colour 
is it possible to retint/darken it.

Welcome to the Bunnings Workshop community. It's marvellous to have you join us, and thanks for sharing your question about your varnish.
I suggest bringing the can of varnish to the store you purchased it from and speaking to the paint specialist. They might be able to offer alternatives to the current colour that you have. Please remember to bring your docket just in case an exchange is necessary.
While at the store, I also recommend looking at the stain and varnish sample boards in the paint department. There you'll see what the varnish and sealers really look like when applied to timber.
