How to remove a metal shelf from a hand held shower?

Welcome to the Bunnings Workshop community. It's sensational to have you join us, and thanks for sharing your question about your shower rail.
In order to remove the metal shelf, the shower rail must be taken apart so that you can slide the shelf off. You'll notice that the bottom post of your shower rail has no screws visible. In order to get access to the screws the front cover cap of the post must be removed. Once the cover cap has been removed you'll see where the screw has been placed, and you'll need to use a Philips screwdriver to remove the screw.
Once the bottom post is loose you should now be able to slide the soap dish out of the post. Simply re-assemble the shower rail in the reverse order and make sure that the cover cap is nice and tight to prevent water from entering it.

I'm so sorry, but I don't have a video guide to show you. However, can you please take a close picture of the bottom post of your shower rail so that I can examine it. I can then hopefully show you how it can be taken apart. Once you figure that out everything else will fall into place.

Thank you for posting those extra photos of your shower post. You'll notice on your second photo a grub screw at the back of the post. I suggest getting an Allen key set and unscrewing that grub screw. Please take great care not to loose the grub screw as you'll need it later on. Once you have removed the grub screw, the post should be easy to pull out. Due to the amount of time that it has been there it might have developed a bit of limescale so give the post a wiggle to loosen it up.
Once the post comes out, you'll be able to slide it off the rail and you can then slide the metal soap dish off the rail as well. Put the post back into position and slide it back onto the wall and put the grub screw back into its spot.

An ordinary handyperson from your local area should be able to remove the shower rail for you. You can even post the job on Airtasker or Hipages.
