I'm tiling out a bathroom, using 600x300mm tiles. Do I find the middle of the wall and start there or do I start in a corner as I plan to stagger the tiles. Any help would be appreciated.

Finding the centre point of the wall is always the best place to start. This will mean the tiles that butt into the walls are cut to the same size which is very important for the aesthetics of the tiling project.
Start by finding the centre point of the wall at the bottom and using a spirit level draw a plumb line the full height of the wall. This will allow you to either centre the grout line, or the centre of the first tile on this mark and then work outwards from there.
