We have removed the old textured paint on our concrete bathroom walls
What would I seal the corners with?
Once we fill any cracks what is the best way to prepare the wall so that it doesn’t allow moisture in?

From the photo, I can't see any obvious visible gaps or cracks in the corners, but if there are any, you can simply fill them with an interior paintable gap filler.
To properly seal the walls and protect them from moisture, you'll need to paint them. The first step would be to apply a primer that's suitable for masonry or concrete surfaces. Once that's dry, you can topcoat with a specialised bathroom paint, which is designed to handle moisture and resist mould.
